A celebration of your visit occurs every morning at our bed and breakfast in Virginia! Breakfast is certainly a key component of your stay and a wonderful reason to choose the Island Manor. Breakfast can be summed up as a plated, served, two-course breakfast, consisting of a fresh seasonal fruit serving, followed by a tasty Southern-inspired hot entree.

Recipes and dishes are inspiration from the best culinary school in the world...my Ge's kitchen! "Ge" is what I affectionately named my maternal grandmother when I was just a toddler, some say after my pet German Shepherd at the time. Raised on the Kentucky side of the Appalachian Mountains, my grandmother learned the tastiest ways of cooking. Many of those cooking techniques have been handed down through the generations, and they have now been slightly modified to modern taste and dietary needs for your breakfast.

The most important ingredient to any dish is love! Love of family, love of friendship and love of good food. So pick your spot, either at the main dining room table, the enclosed porch with tables for two or outside on the brick courtyard, and let us serve you a delicious way to start your day.

Here are some of our guest favorites-
Island Manor House Quiche
Ingredients:
Package of frozen Spinach
1/2 stick Butter
1/2 cup Chopped Green Onion
Ground Black Pepper
4 eggs
1 cup Heavy Whipping Cream
1 cup Half and Half
1/2 cup grated Parmesan Cheese
Sharp Cheddar Cheese, shredded

Directions:
» Thaw spinach, mix with Butter, chopped Green Onion. Sprinkle with ground Black Pepper. Cook 5 minutes in microwave.
» In a large bowl, beat eggs. Add Heavy Cream and Half-&-Half mix well. Stir in Parmesan Cheese and handful of Cheddar Cheese. Blend in Spinach Mixture.
» Coat quiche dish with cooking spray. Pour in quiche mixture.
» Bake at 425 degrees for 30 minutes.
» Let cool 10 minutes, cute into 6-8 slices.

Banana Chocolate Chip Bread
Ingredients:
1/4 cup Sour Cream
1 tsp Baking Soda
1/2 cup Butter, softened
1 1/4 cups Sugar
1 3/4 cups Flour
Pinch Salt
1 cup Mashed Banana
1 cup Semi-Sweet Chocolate Chips
1 tsp Vanilla

Directions:
» Preheat oven to 350, grease bread pan.
» Stir together sour cream and baking soda, set aside.
» Cream butter and sugar until light and fluffy.
» Add eggs, one at a time, beat well.
» Beat in sour cream.
» Stir in dry ingredients, just until moistened. Do not over mix.
» Bake for 55-60 minutes, or until tester comes out clean.
» Let cool in pan for 15 minutes, then remove from pan and let cool on rack.

Mexican Egg Bake
Ingredients:
6 flour tortillas
12 eggs
1/2 cup Milk
1 cup Cheddar Cheese
1/2 red or orange Bell Pepper, chopped
1/2 green Bell Pepper, chopped
1 jar Salsa

Directions:
» Grease 9x13 baking dish. Layer tortillas along bottom so that edges overlap.
» In a large bowl, beat together eggs and milk. Stir in cheese and peppers. Pour egg mixture over tortillas in baking dish.
» Bake in preheated 350 degree oven for 25-35 minutes.
» Warm salsa in small pot.
» Cut Egg Bake into 8 servings, place on plate and cover with Salsa.
